What does the word "kamado" mean?

The name "kamado" is, in fact, the Japanese word for "stove" or "cooking range." The word literally means, "place for the cauldron" and has become the general term for this style of ceramic cooker.

How do you pronounce "kamado"?

Kah-MAH-doh. Our friend, The Naked Whiz, says that the word "kamado" is Japanese and thus has no emphasis on any syllables. As such, the true way to pronounce "kamado" is to succinctly enunciate every syllable evenly as ka-ma-do without any pauses. We'll let you be the judge though :-)

What is a kamado grill?

A kamado style grill is a ceramic cooking vessel and have been around for approximately 4,000 years. The original kamado style grills were made of clay and these cooking pots have been found in every part of the world. Modern kamado style cookers are made from a variety of materials including high fire ceramics, refractory materials, traditional terra cotta and a mix of portland cement and crushed lava rock. The interior of the grill is made up of high fiber ceramic and the exterior has a textured stucco-like surface which is designed to reflect heat allowing temperatures of up to 1,200°F to be reached.

What make a kamado type of grill so different?

The kamado grill just makes food taste better. Period. We chose to partner with Kamado Joe and exclusively feature their grills. Here are three additional reasons that the kamado cooker is so different:

  1. It is the most versatile cooking instrument in the world. You can grill, smoke, roast, bake, cold smoke, reverse sear and much more on the grill. It's like a smoker, oven, stove and grill all combined in one.
  2. There is no flavor contamination or metallic taste to the cooked food.
  3. Ceramic is a porous material that retains heat and moisture arguably better than any other element. Combine this factor with the convection style cooking within the Kamado Joe's dome where heat is constantly circulating and you'll find that the grill is just simply amazing!

Why Kamado Joe?

There are a number of fantastic kamado style grill manufacturers and choosing just one company to partner with was a very difficult decision. Ultimately, we saw Kamado Joe as a fast-growing and innovative company that was eager to create something remarkable. We share these characteristics with Kamado Joe and both of our companies decided that we were a great fit for one another!

What is lump charcoal?

Lump charcoal is made up of large pieces of wood that have been produced by a scientific principle known as pyrolysis. Lump charcoal is created by slow burning wood in tight spaces with the absence of oxygen.

Our lump charcoal is made from a White Gabacho tree in the Chaco region of Argentina. The wood is sustainably cut down and regrown using a technique called coppicing and is slowly formed over 14 days before it is shipped to the United States. When making lump charcoal, we actually enhance the economic environment by planting two trees for every one tree that is used in the production of the charcoal. Lump charcoal creates little ash and is all natural as opposed to many of the charcoal briquette products that contain additives that can contaminate the flavor of the food. Lump charcoal is the sole fuel source that we use in our restaurant.

Are you a fine dining restaurant?

We believe that we are simply an experience worth talking about and are the first of our kind. We challenged ourselves to be radically different and will leave the interpretation up to you. Our goal is to make dining fun again and make you feel as though you're grilling out on your back deck with the best of friends and family.

Can I call ahead and be put at the top of the wait list?

You sure can! We typically have wait times so we firmly recommend making a priority call ahead seating request.

What are your hours?

We are open from 4:00-9:30 PM on Monday through Thursday.

We are also open from 4:00-10:30 PM on Friday, 12:00-10:30 PM on Saturday, and 12:00-8:00 PM on Sunday.

How would I describe your restaurant to friends?

Kamado Grille is a remarkable experience and is the first of its kind. We consider ourselves the "Disneyland of restaurants." Here are our five defining differentiators:

KamadoGo is our curbside to-go service. With KamadoGo, you're able to order online, call us at 919-803-3662 or even order within the restaurant from our iPads and we'll have all of your delicious food ready to go and brought out to your vehicle.

Are all of your products locally sourced?

We get the best products as close as possible from people that we trust and respect. In essence, we have focused our partnering decisions around sustainability, humane treatment and feature products void of additives, preservatives, steroids and antibiotics. Equally as important, we chose to partner with companies that we genuinely enjoy being around that just so happen to offer the highest quality in our general vicinity.

Do you offer gluten free, vegan and other allergen free foods?

Yes, absolutely. Many of our menu items will appease your needs as they come but you're also able to customize your meal right from our iPad or online ordering system. If you have any questions, please feel free to ask a member of the Kamado Grille team.
