The name "kamado" is, in fact, the Japanese word for "stove" or "cooking range." The word literally means, "place for the cauldron" and has become the general term for this style of ceramic cooker.
Kah-MAH-doh. Our friend, The Naked Whiz, says that the word "kamado" is Japanese and thus has no emphasis on any syllables. As such, the true way to pronounce "kamado" is to succinctly enunciate every syllable evenly as ka-ma-do without any pauses. We'll let you be the judge though :-)
A kamado style grill is a ceramic cooking vessel and have been around for approximately 4,000 years. The original kamado style grills were made of clay and these cooking pots have been found in every part of the world. Modern kamado style cookers are made from a variety of materials including high fire ceramics, refractory materials, traditional terra cotta and a mix of portland cement and crushed lava rock. The interior of the grill is made up of high fiber ceramic and the exterior has a textured stucco-like surface which is designed to reflect heat allowing temperatures of up to 1,200°F to be reached.

There are a number of fantastic kamado style grill manufacturers and choosing just one company to partner with was a very difficult decision. Lump charcoal is made up of large pieces of wood that have been produced by a scientific principle known as pyrolysis. Lump charcoal is created by slow burning wood in tight spaces with the absence of oxygen.
Our lump charcoal is made from a White Gabacho tree in the Chaco region of Argentina. The wood is sustainably cut down and regrown using a technique called coppicing and is slowly formed over 14 days before it is shipped to the United States. When making lump charcoal, we actually enhance the economic environment by planting two trees for every one tree that is used in the production of the charcoal. Lump charcoal creates little ash and is all natural as opposed to many of the charcoal briquette products that contain additives that can contaminate the flavor of the food. Lump charcoal is the sole fuel source that we use in our restaurant.
We believe that we are simply an experience worth talking about and are the first of our kind. We challenged ourselves to be radically different and will leave the interpretation up to you.
